Much of this content will be covered in the MMA Striking series, but for now-- keep in mind that the most important kick in MMA (I would argue) is the lead inside leg kick. Getting your opponent's knee off of the center line is vital to stopping his forward attacks. Please check out the explanation included in the video below.

I'd leave the head kicks for highlight reels. Last time I intentionally kicked a guy in the head was when after a few leg kicks I notice he ducked to the side I was kicking and acting like he was going to make a grab for my leg. Next one went to the noggin.
Kicks to the body are iffy becaue they are just too easy to grab. When I go to the body I have usually gotten the guys hands up defending punches and I'll go for a shin across the floater (right) or aim for the liver. if I know guy is grabby and i want to get it to the ground. I kick a tad slower and let him grab it. Then swing under and turn for a leg.
I stick to leg kicks. and I tend to throw them in as a component of my strike combinations. Jab, cross, jab, lead leg kick or jab, cross rear leg kick and so on.

I leg kick is like a jab. Your kicks open up a lot.
I think you should throw head kicks, keep them guessing and on their toes.
I agree 100% that the inside leg kick is the most important kick.
You should always mix up your kicks though, take what you can get. You should always been attacking and posing a threat, and kicks help that A LOT.
